Andries Burger reads Chardonnay and Pinot Noir as Cellar Master at Paul Cluver Wines in Elgin, South Africa, where the cellar brief stays close to site. Andries Burger became a member of the Cape Winemakers Guild in 2010, and his own line on the Guild wines is spare: “My focus for the Guild wines is on Chardonnay and Pinot Noir.” That focus also frames the place. Paul Cluver Wines works from an estate scale in Elgin, with Pinot Noir, Chardonnay, Riesling, Sauvignon Blanc and Gewürztraminer among the varieties tied to the property. The house is known for benchmark Pinot Noir and Chardonnay from this cool valley, but Burger’s role is less about announcing a style than holding the vineyard in view.

Cool air, shale, and restraint

The method at Paul Cluver Wines is stated through a sustainable estate philosophy rather than a published cellar recipe. The important measurements here are geographical and material: elevated sites, Bokkeveld shale soils, mountain air and conservation land around the vineyards. Those conditions give Burger a narrow path to follow. Chardonnay can carry texture without losing line. Pinot Noir can hold structure without being pushed into heaviness. They extend the cellar’s conversation with acidity and aromatic detail.

The estate’s wines are still wines, red and white, shaped for the Elgin appellation. Wagon Trail Chardonnay and Seven Flags Pinot Noir sit among Burger’s signature wines, and both point toward the same discipline: keep texture, keep balance, keep the finish composed. The house does not set out a full fermentation or ageing program publicly, which leaves the glass and the stated brief to carry it. This is cellar work built around poise rather than force.

The quiet of the valley cellar

The cellar belongs to a quiet setting: vineyards, gardens, mountains and the slower atmosphere of a cool-climate valley. The tasting room may be the visitor’s point of contact, but the work begins before the pour, in the reading of fruit from elevated Elgin sites and in the cellar choices that protect that reading. Nothing in the place asks to be loud. The setting does part of the speaking.

At Paul Cluver Wines, the room around the wine feels aligned with the wines themselves: scenic, rustic, measured, and attentive to detail without theatre. The valley gives Burger a vocabulary of acidity, texture and contour. His task is to keep it legible. The craft and the concrete thread remain the same: Wagon Trail Chardonnay, Seven Flags Pinot Noir, and the Elgin shale beneath them.
