White truffle fat-wash gives the Martini its first signal before the glass reaches the marble. Rabbit Hole in Thong Lor, Bangkok, is a bar built around composition rather than display. The back bar is read as a set of decisions: grain, cask, proof, sweetness, bitterness, dilution, and the point at which a spirit can carry another flavor without losing its own spine.

What is clear is the division of labor: Group Beverage Director Supawit “Palm” Muttarattana, Head Bartender Noppasate “Depp” Hirunwathit, and the team have shaped the cocktail program at the station. It is a bar where the spirits in the glass sit beside many hands.

A menu built by alphabet and clue

The program’s most public turn came with the 2021 A-Z menu, launched March 21 as its first update in seven years. The form was simple: 26 drinks, one for each English alphabet letter. The work inside the form was not. Apple put red apple, fermented raspberry, Campari, Ketel One vodka, green apple, and giant water bug mousse into one line of thought. Temperature set pineapple, lavender, cucumber, Midori, Don Julio Blanco tequila, warm fingerroot, and tofu mousse against each other. Rock & Roll used hops, onion, sweet soy sauce, Coca-Cola, Jack Daniel’s Tennessee whiskey, and cigar smoke, a drink that treated the back bar as pantry, smoke box, and cellar at once.

That appetite for structure continued in a crossword-inspired menu of 16 city-led cocktails, each introduced through a clue rather than a plain description. The categories carry the service: Spirit Forward, Refreshing, Savoury. The list runs past 20 in-house cocktails, with Truffle Martini, Cosa Nostra, Tropical Panda Air, Ra-Tuay, Gummy, and Temperature among the names that give the room its vocabulary. Fermentation, clarification, mousse, brine, infusion, and smoke are not decorations here; they are the method by which the bar makes savory and tropical profiles hold their line.

Copper, brick, and the unmarked door

The first threshold is an unmarked wooden door, a quiet refusal of signage before the room narrows into its own light. Inside, Rabbit Hole works upward through three levels, with exposed brick, polished copper and brass, a marble-topped bar, and a back bar dense enough to make choosing feel like reading. The room is dark without being vague. It lets the glass carry color.

Service moves with the pace of a lively bar rather than a hushed counter, but the station still matters. A bartender has to explain a drink like K for Kimchi without turning it into theater: red cabbage, kimchi brine, chili, absinthe, shochu, and Tanqueray London Dry Gin need a steady hand before they need a story. If the next chapter stays with clue-led menus, the craft will still be measured in the same place, at the Rabbit Hole back bar beside Temperature.
