A cook returned to the house that trained him

The set menu is decided before the guest sits down, which is the first thing to know about Joachim Jaud at Restaurant 141 in Mieming. The room opened in April 2024 in the old main building of Alpenresort Schwarz, on the Mieminger Plateau near Innsbruck, and it takes its name from the resort's own address at Obermieming 141. Jaud comes from nearby Telfs and completed his first culinary training at Alpenresort Schwarz itself, then left to work through top kitchens across Europe before returning to lead the fine-dining room in the Tyrolean house that formed him.

That return is the shape of the restaurant. A kitchen built for a small team rather than volume, with the chef named on the door and the resort's larger dining rooms elsewhere on the property. Restaurant 141 earned two Michelin stars in the 2025 Michelin Guide Austria, a fast ascent for a dining room barely a year old, and the guide's own reading of the food was that it is pared back to the essentials and full of expression.

The menu is held to five or seven courses

The discipline is set-menu cooking: five courses or seven, no à la carte drift, no loose middle. That structure gives the kitchen control over pace and temperature. The register is modern Austrian, with French and Japanese influence showing in the handling rather than in decoration. StörKaviar, Feigenblatt and Vin Jaune Sauce give the menu its centre: Alpine product, controlled acidity, dairy and wine depth, and the kind of sauce work that asks for repetition at the stove.

The kitchen leans local when the ingredient warrants it, which is the only version of regional cooking that holds up at this level. The wine program follows the same line of restraint, known for a fine selection with numerous organic options and rare bottles rather than for size as theatre. Pairing here has to carry the resort guest and the committed diner at the same table.

    A modern room inside a 1694 house

The room works against an older shell. Restaurant 141 occupies a structure dating to 1694, and the present dining room keeps a chic modern interior inside that weight of timber and Tyrolean history. The atmosphere is intimate, around 20 guests, quiet enough for the pass to set the rhythm without the room announcing itself. Mountain views enter the experience as a condition of the plateau rather than as a decorative claim.

Service is formal and attentive, the kind required by a tasting menu whose courses have already been chosen. The wider resort holds a trio of restaurants, including the thousand-square-metre Genusswelt with its Kochinsel cooking station and Gemüsekorb produce display, and a third room at the highest point of the 27-hole golf course. This one is narrower in purpose. It is the flagship table, built for concentration.

    Why the address matters now

A chef trained in this house has come back to cook at its most exacting station. What there is to watch is the menu's seasonal turn inside that small room, and whether Jaud keeps the old building's new discipline as close as it began.
