He held a chef role at Les Ambassadeurs from 2008 to 2011, then a chef de cuisine post at Hôtel de La Mainaz from 2019 to 2024, before a 2024 chef role at Restaurant des Hauts de Loire and the present Executive Chef title here. The kitchen’s method is seasonal, but not vague. The house states that nearly 90% of its ingredients come from the Jura region, a figure that gives the program its frame before any garnish is added. On-property honey and eggs from roaming chickens belong to the wider château table, while the restaurant draws its clearest line through dishes such as Bresse poultry roasted on the trunk, gaude flour with Morteau sausage, and plates built around crab, langoustine, wild fish, veal sweetbreads, blueberries, verbena and hibiscus. The technique is French in its grammar: reductions, demi-sel seasoning, croustillant texture, bisque foam, lactic foam, raw and cooked fruit set beside one another for contrast. The cellar supports that cooking with Jura wines held in the old château basement, alongside bottles from elsewhere in France. There is no need to stretch the language around the program. The region supplies enough tension on its own: smoke, dairy, vin jaune, river fish, pasture, orchard and the quiet acidity of local wine.
The room works at a low volume. Service moves formally, but the setting softens it: a calm dining room opening toward a terrace, a swimming pool and a wooded park that is lit in the evening rather than staged. The château began as a 13th-century fortress on the River Loue, became an 18th-century hunting lodge for the Marquis de Germigney, and had turned into a hotel by 1830. Roland and Véréna Schön restored the property in 1997, keeping original stone and period features while making the house livable again as a country retreat. That history sits around the restaurant without becoming decoration. At the counter, the work remains contemporary; at the table, the old walls keep time.
Pierre Basso Moro shaped an earlier chapter here from 1997, bringing Jura produce into conversation with Mediterranean memory and building dishes such as a hot apple in a Mont d’Or box with quince sorbet and vin jaune. Thomasson now carries a different present tense, with the same local insistence and a tighter seasonal line. End the meal where the house begins its argument: with Bresse poultry, Morteau sausage, Jura wine, and the gaude flour that returns to the pass.
