Fruit first, spirit after

Fruit comes before the still at Rock 12 Distillery. Marko Suput, owner and Head Distiller at Rock 12 Distillery in Lompoc, founded the house in 2016 and has kept its brief unusually direct: fruit in, brandy out. His own rule for the place is that any fruit that grows there can become brandy, a sentence that reads less like a label line than a production constraint. The maker has not separated concept from daily work. Suput remains founder, owner, and Head Distiller, holding the fruit, the fermentation, and the finished spirit in one chain of responsibility. That continuity matters in a small distillery. The same hand that set the frame in 2016 still decides what belongs in the program, how far transformation should go, and when the spirit has enough definition to stand without ornament.

A chemical plant with fruit at its center

Suput has described the distillery as his own chemical plant, and the phrase fits the bench-side nature of the work. Fruit brandy asks for concentration without disguise. The ingredient arrives with its own season, sugar, acid, aroma, and flaws; the distiller has to decide what can pass through fermentation and distillation with clarity. At Rock 12, the stated discipline is controlled transformation rather than decoration. The portfolio extends beyond brandy to Victus Amaro, but the same logic holds: structure first, ingredient close behind, finish last. Without public still type, cut points, or vessel count, Rock 12 rests on the brief Suput has kept since 2016: fruit in, brandy out. Fruit gives the distillery its grammar. The room has to be read through the work rather than through hospitality theatre. Rock 12 is identified with Lompoc and the Santa Rita Hills, places better known for fruit and cool-climate agriculture than for polished spirit language. Suput’s distillery takes that agricultural nearness seriously, not as scenery but as feedstock logic. The still house is where the local growing season becomes a technical problem: what comes in as fruit must leave as something more concentrated, stable, and exact. Nothing in the public face of the house asks the reader to start with scale. Start instead with authorship. Since 2016, the person who founded Rock 12 has remained the person responsible for its daily direction, and the room takes its character from that narrow passage between ingredient and decision.

Victus Amaro in the same hand

Rock 12 carries one recorded point of acclaim through Suput’s work: John Barleycorn Society recognition for best liqueur in 2023. The award belongs to the maker’s liqueur practice, and it matters here because it does not pull the house away from its core discipline.
