Restraint in the head winemaker’s hand

The Zinfandel stays in the savory lane under Steve Gerbac, winemaker at Rusack Vineyards in Solvang, where the cellar work favors balance over gloss. Gerbac has led the winemaking here since 2012, after being raised in Santa Barbara, and his read on the place remains local in the most practical sense: climate first, weight second, polish only when it serves the wine. The house works within Ballard Canyon, with a portfolio that reaches across Syrah, Pinot Noir, Chardonnay, Rosé, Semillon, Sauvignon Blanc and Zinfandel. In Gerbac’s hands, that breadth does not become a display of range for its own sake. The through-line is control. His known bottles include 2016 Rusack Sauvignon Blanc, Santa Barbara County, 2016 Rusack Chardonnay Mt. Carmel Vineyard, Sta. Rita Hills, Rusack Vineyards Chardonnay, Rusack Vineyards Pinot Noir (Santa Barbara County) 2020 and Rusack 2014 Estate Reserve Syrah (Ballard Canyon). Read together, they show a winemaker more interested in clarity than volume. The Zinfandel is the sharpest statement of that discipline, traditional, cool-climate, savory and elegant rather than jammy. That is not a rejection of fruit. It is a decision about proportion.

A cellar framed by Santa Barbara weather

Rusack’s program sits in a small-scale, conventional frame, with still red, still white, still rosé and dessert wines moving through the same house vocabulary. The exact cellar protocols are not something the winery publishes in detail, and the wines Gerbac chooses to make and how he allows them to sit. Syrah belongs naturally to Ballard Canyon here, while Pinot Noir and Chardonnay keep Santa Barbara County and Sta. Rita Hills in view through named bottlings. Sauvignon Blanc and Semillon widen the white side of the bench without pulling the work away from restraint. The method, as it can be read from the glass, privileges structure and poise. Zinfandel, often pushed toward sweetness and weight elsewhere, takes another route at Rusack. Gerbac holds it to a cooler register, where savory tone and shape matter more than ripeness as a declaration. It is the long way, not because the winery describes it that way, but because the result depends on refusing the easier, louder profile.

Oak shade above the vines

The tasting room gives much of the work back to the hillside. Rusack’s patio sits under ancient oak trees, with vineyard rows below and rolling Santa Barbara country beyond them. The room is quiet by design, less a stage than a place to let a flight settle. Shaded outdoor seating, gentle breezes and the sound of fountains keep the pace unforced; the view carries the estate without requiring ceremony from it. This is a winery where the counter and the patio read as extensions of the same discipline in the cellar. The wines do not need a loud room, and the room does not ask them to become louder. A picnic on the hill, a glass of Ballard Canyon Syrah, the oak canopy overhead: the setting gives Gerbac’s restraint a physical address.
