    A château that is also a classroom

    Restaurant Saisons sits in the Château du Parc du Vivier in Écully, on the western edge of Lyon, and it is the only Michelin-starred teaching restaurant in France. The château was built in 1882 by the Cottins, a prominent Lyonnais silk-merchant family, and the restaurant opened in 1990 alongside the creation of the Institut Paul Bocuse by Gérard Pélisson and Paul Bocuse himself. The school is now known as Institut Lyfe.

    Saisons works as a restaurant d'application. Third-year students, drawn from seventy nationalities, come through in immersive four-week rotations, fully integrated into the operation as staff and sometimes as internal clients, under close supervision by a professional team. Its executive chef is Florian Pansin. That structure makes the room a working laboratory as much as a dining room, and it is what makes the star unusual: the brigade changes every four weeks and the standard has to survive each handover.

    Seasonal produce, some of it grown on site

    The cooking is creative French and seasonal, served as tasting and prix fixe menus, with farm-to-table and local sourcing behind it and produce coming from on-site permaculture greenhouses. Growing part of the supply on the estate suits a teaching kitchen, since it puts the whole chain from bed to plate inside the students' rotation rather than outside it.

    The signatures are Saint-Jacques à la noix and selle d'agneau au Zaatar, and they are well chosen for the purpose. A scallop is a test of timing measured in seconds. A saddle of lamb is a test of butchery, resting and carving. Both are dishes a student can be taught to execute and neither can be faked, which is what a pedagogical menu needs. The wine list is curated, and the stated founding idea is l'Art de Vivre à la Française, combining the house's traditions with modern work around seasonal produce.

    Luminous rooms above a century-old park

    The setting is elegant and luminous inside the historic château, with views over a century-old wooded park, and the atmosphere stays refined and welcoming rather than intimidating. The capacity is small, the volume quiet, and the service formal, which is part of the training.

    The house also programmes around the meal. Four-hands dinners bring in outside chefs, including a collaboration with the double-starred Meilleur Ouvrier de France Jérôme Schilling, and a series of jazz evenings runs through the year on selected Tuesdays. The evenings are memorable in a castle setting, and kindness, quality and value are what get singled out, which is the register a teaching restaurant should aim for.

    Saisons has held its Michelin star since 2020. Holding a star while functioning as a school is the achievement here, because every advantage a starred kitchen normally relies on, a settled brigade above all, is deliberately absent.

    What the house offers is a bridge between elite fine dining and hospitality education, delivering star-level cooking without the exclusivity of a purely commercial peer. In a region defined by Paul Bocuse's legacy, that is the most appropriate memorial available: not a museum, but a room at the gates of Lyon where the next generation is taught to cook and then made to serve.
