    Powdered capers at the pass

    Powdered capers sharpen the tagliolino before Marco Ambrosino, chef of Sustanza in Naples, lets candied lemon pull the plate toward brightness. The gesture is small, but it gives the room its grammar: Mediterranean ingredients treated as structure, not decoration. Ambrosino arrived here with a line of work that runs through Il Melograno in Ischia and 28 Posti in Milan, where he worked from 2014 to 2021, before bringing the discipline back south. He also founded Collettivo Mediterraneo in 2019, a parallel frame for the same questions of place, memory and method. At Sustanza, his own phrase for the cooking is “contemporary Mediterranean cuisine,” and the plates keep the wording honest. Pork belly comes with cauliflower, mint and winegarum. Ricotta meets pollen gelato, citrus fruit ash and mullet bottarga. The references are local enough to be legible, then shifted through acidity, bitterness, fermentation and heat until they stop behaving like citation.

    The kitchen’s most telling method is a vegetable consommé renewed daily by a solera method, a cellar logic brought to the pass. It suits Ambrosino’s cooking because it asks freshness to carry memory rather than erase it. Fermentation appears throughout the program, not as ornament, but as pressure: rose fennel for an oyster glaze, fermented bread wine, winegarum, preserved vegetables, caper leaf, vinegar, spice. A meal may begin with homemade tonic scented with Mediterranean spices and clove, then a cube of white melon infused with rice vinegar, lime, pepper and caper leaf. From there, the menu moves through a waffle with chickpea flour and hummus, homemade danubio for scarpetta, vegetable flan with miso, olives, Misticanza and Sicilian oil. The sequence keeps returning to the same discipline. Sweetness gets checked. Fat gets cut. Sea and dairy sit close without being smoothed into one another.

    Liberty rooms above the cafe chantant

    The work happens in historic Liberty-style rooms above a cafe chantant, inside the Galleria Principe di Napoli. Entrepreneur Luca Iannuzzi brought the building back into use, and artist Eugenio Tibaldi signed the restyling, with art, antiques and Art Deco-style furnishings giving the dining rooms a lived cultural weight. The atmosphere is refined rather than hushed. Conversation stays in the room while the pass sends out plates that ask for attention: dogfish crudo with grilled kale salad, maritime pine oil, squid ink and sea urchin ice cream; grilled artichoke with black truffle, olives, cucunci, farmer’s bitter and nutmeg. The room does not soften the cooking. It gives the acidity somewhere to land.

    Discovery without nostalgia

    Ambrosino has said, “Cucina is a discovery of new things, of forgotten things.” Sustanza takes that sentence literally. It does not remake Naples as a postcard, and it does not leave the territory behind to prove range. The kitchen keeps looking for forms that can hold both: Procida seafood, southern bitterness, fermented vegetable stock, citrus ash, bottarga. At Sustanza in Naples, the consommé carries memory forward bowl by bowl.
