Julien Fayard reads Cabernet Sauvignon as structure first, then texture. As winemaker for Taplin Cellars in St. Helena, Julien Fayard works with an estate brief set by place rather than scale: Cabernet Sauvignon, Cabernet Franc, and Rosé from land on the western bench of St. Helena, in the foothills of the Mayacamas. The property sits on Bale gravelly loam soils, with vines tied to a family estate held for over 155 years. That is enough history to quiet a cellar.

Fayard’s route to this station began in Provence, at his uncle’s Château Sainte Marguerite, then moved through Château Lafite Rothschild and Château Smith Haut Lafitte in Bordeaux. In Napa Valley, he worked with Philippe Melka from 2006, later serving as winemaker at Le Pich, and today he carries Cabernet Sauvignon across several projects, including Azur Wines, Purlieu, Caspar Estate, Covert Estate, BRION, and Taplin Cellars. He has put the center of his work plainly: “My core focus has been Cabernet Sauvignon.” At Taplin, that sentence meets St. Helena fruit, old family ground, and the restraint of a very small cellar.

The program is narrow by design. Taplin Cellars focuses on estate Cabernet Sauvignon and Rosé, with Cabernet Franc also named in the vineyard frame, and the production scale stays around 300 cases per year. That figure matters because it changes the feel of every decision. Blending is not an abstract exercise when each lot carries a visible share of the final wine; the hand has less room to disappear.

The estate’s setting gives the wines their working grammar. St. Helena brings warmth and Cabernet ripeness, while the western bench and Mayacamas foothills place the vines on gravelly loam rather than deep valley-floor anonymity. Fayard’s BRION work marks him as a Cabernet winemaker with a precise appetite for site, and Taplin gives that discipline a smaller, older estate frame.

The cellar stays close to the vines

The experience of the place follows the scale. This is not a large room built around spectacle; it is an intimate St. Helena estate where the vineyard remains near the tasting room and the cellar conversation stays close to the fruit. The mood is quiet, rustic, and scenic, with the Mayacamas foothills setting the western edge and the St. Helena AVA doing the rest of the work.

In that kind of room, detail has nowhere to hide. A private tasting can keep its attention on the Cabernet Sauvignon in the glass, the Rosé beside it, and the old family ground outside. The quiet is useful. It lets the bench, the cellar, and the vineyard speak in the same register.

Held land, narrow authorship

Taplin matters because its scale resists the easy habits of Napa abundance. Around 300 cases and a Cabernet-focused winemaker make a compact set of facts, but they are sufficient. The next vintage will still have to answer to Bale gravelly loam, St. Helena heat, and Julien Fayard’s Cabernet Sauvignon.
