His public language about the place has always been direct: “The way I grew up was bobbing and weaving and dodging bullets. But I’ve always eaten tacos. They’re the food of champions.” At this counter, that line reads less like a slogan than a station note. The format is compact, repeatable, and built for appetite rather than ceremony. Trejo’s route to the restaurant did not begin in a culinary school kitchen. His working life has held construction labor, gardening, lawn care, counseling, film sets, boxing advice, and restaurants; the useful through-line is physical repetition and responsibility. Trejo’s Tacos opened its first La Brea Avenue location in early 2016 in a repurposed Taco Bell building, with Trejo as the face and owner behind a modern taqueria built for Los Angeles diets and Los Angeles speed. Daniel Mattern, formerly of Cook’s County, shaped the opening menu, including the original 10 taco lineup and its in-house fermented salsas. Trejo’s role is less about chefly distance than insistence on legibility: tacos, broad appeal, no unnecessary mystique.
The menu works by variation rather than sprawl. Steak Asada carries toasted pepita pesto and slaw; Carnitas brings slow-roasted pork with grilled pineapple, red onion, cilantro, and fermented red chile sauce; Chicken Tinga sits beside blackened salmon with white corn, cherry tomato, slaw, orange cream, and cilantro. The vegan side of the bench is not an afterthought. Black Pepper Tofu draws on Yotam Ottolenghi’s black pepper tofu, moved into a tortilla with caramelized shallots, serrano chiles, scallions, pickled onions, and cilantro. Rainbow Cauliflower uses corn, cashew cream, pickled onion, and micro cilantro; jackfruit takes on the pulled-pork role without pretending the tradition is fixed. The beverage program keeps the same practical register. Seasonal aguas frescas rotate, kombucha pours from tap, and the cold brew horchata folds coffee into a date-sweetened horchata that suits the counter better than a long wine list would. Trejo’s own Cerveca beer sits in the casual lane, while the coffee tie reaches to Zona Rosa Coffee in Pasadena. The method here is not purity. It is accommodation with a point of view.
The room is small, with the patio doing much of the holding. Kristofer Keith of Spacecraft Design Group gave the first location a clean fast-casual frame, and Ernesto Yerena’s artwork puts Trejo in apron and cleavers, turning the wall into a kind of house signature. Orders move from counter to number to table; the work shows itself in the passing of trays, the sauce choices, the quick return to the bench. Indoors, the place reads modern and compact. Outside, shaded communal tables soften the pace without making it slow. It is a taco room in a city full of taco rooms, but the particular texture comes from the mix: fermented salsa, cold brew horchata, jackfruit, carnitas, Trejo’s face on the wall, and a line that keeps moving.
From the first location, the house practice included sending unsold food nightly to local homeless shelters. That detail matters because it belongs to the operating method, not to decoration. Trejo has spoken just as plainly about the other work he still carries: “When I came out of the institution, I became a drug counselor. In fact, I’m still a drug counselor.” The restaurant sits inside that wider life of service, labor, and public recognition, but the plate stays simple: Steak Asada Taco, Carnitas Taco, Chicken Tinga Taco, and the cold brew horchata at Trejo’s Tacos.
