The Cabernet program begins with estate fruit and a steady hand. Peter Heitz, winemaker at Turnbull Wine Cellars in Oakville, has held that station since 2007, long enough for the work to read less like a season and more like a discipline. His route into the cellar was direct: University of California, Santa Cruz, then Associate Winemaker at Beringer, then Turnbull, where he has remained with a Cabernet-led program organized around site, structure, and repetition. The house names Fortuna Vineyard Cabernet Sauvignon, Black Label Cabernet Sauvignon, Pierra Cabernet Sauvignon, and Leopoldina Vineyard among the bottlings associated with his work. Those names matter because they keep the attention on place rather than cellar flourish. Heitz describes the aim in practical terms, wines rooted in estate vineyards, built for endurance, structure, and drinkability. At this bench, the gesture is not reinvention. It is returning to the same fruit, the same frame, and the same question of how much the cellar should say.

Four estate vineyards, Cabernet at the center

Turnbull works from four estate vineyards spanning over 150 acres, with Cabernet Sauvignon at the center of the house’s still red program. Merlot, Petit Verdot, Cabernet Franc, and Sauvignon Blanc sit in the wider field of the cellar, but the public signature gathers most clearly around Oakville Cabernet and named vineyard bottlings. The production philosophy is stated as sustainable, and the scale is small, which gives the program its useful constraint: estate material, repeated passes through familiar sites, and a portfolio that asks the taster to notice difference inside a tight grammar. What it does make plain is the organizing principle, terroir-driven Cabernet Sauvignon from Oakville fruit, with site names carrying weight across the labels. In Heitz’s language, the wines are meant to be elegant, enduring, structured, interesting, and delicious. The sentence is plain. The cellar has to earn it.

Photography, garden light, and the tasting room

The room keeps its voice low. Turnbull’s hospitality moves through a contemporary tasting gallery, where the house’s photography collection shares attention with garden views and the modern rustic architecture of William Turnbull’s barns. It is a winery setting rather than a dining room, quiet enough for the glass to stay in focus, but not so formal that the place becomes brittle. The tasting room offers seated and gallery tastings, and the visual field matters: photographs on the wall, vineyard beyond the room, gardens softening the line between the cellar and the visitor’s table. Oakville can make Cabernet feel like a large subject. Here, the room narrows it back to the glass.

A program measured by return

Heitz’s tenure gives Turnbull its most legible continuity. The next useful measure is not a louder claim, but the persistence of the same Cabernet vocabulary across estate vineyards, from Fortuna Vineyard Cabernet Sauvignon to Leopoldina Vineyard. The glass shows Oakville fruit, a quiet gallery, and Peter Heitz still working the Turnbull cellar.
