Earlier fruit, longer attention

Picking earlier is the first visible decision: Justin Willett, owner and winemaker at Tyler Winery in Lompoc, keeps acidity in view before the fruit reaches the cellar. He has held the work here since 2005, when he founded the winery and took on the owner and winemaker roles at the same time. The title sounds compact. The day-to-day is wider: vineyard judgment, cellar timing, blending decisions, and the patience to let a vintage settle before the next correction is made.

Willett came to Tyler after time as assistant winemaker at Arcadian Winery, and studied at the University of California, Santa Barbara. Since 2011, he has also been co-founder of Lieu Dit, alongside his role as resident winemaker of Wenzlau Vineyards. Those lines add breadth, but Tyler remains the bench where his preference for restraint is easiest to read. He speaks of wine as a craft without many absolutes, a field worked through taste, observation, and repeated questions rather than fixed answers.

Chardonnay and Pinot Noir held to tension

The program at Tyler centers on small-production Chardonnay and Pinot Noir from old vines in Santa Barbara County. The house works with sustainable and organic sourcing tags, and the wines sit in the still white and still red registers rather than a broader spread of styles. Willett’s stated picking decision is plain: earlier harvests for higher acidity and less sugar, and therefore less alcohol. That choice sets the frame before fermentation begins.

Inside that frame, the method depends less on display than on sequence. Fruit comes in with freshness protected; fermentations ask for timing; blending brings the separate lots back to the table. Willett’s own description of the work, “try to understand something that doesn’t have a lot of absolutes,” fits the cellar as much as the glass. Each vintage returns the same materials to the hands, Chardonnay and Pinot Noir, but not the same answer. The discipline is in noticing the difference soon enough to act, and late enough not to overcorrect.

The quiet edge of the Lompoc cellar

The winery works from an industrial facility in Lompoc, with the vineyard view opening out at Mae Estate. The setting carries two registers at once: the practical cellar, where tanks, barrels, and tasting benches make the work legible, and the quieter distance of rows beyond the building. It is not a room built to overwhelm the craft. It gives the wine space to be tasted without noise.

That restraint matters in a place built around private tasting. The hosts keep the atmosphere relaxed and informed, which suits wines made on small shifts of harvest timing and cellar judgment. In the glass, the work asks for attention to line rather than weight, especially where Chardonnay and Pinot Noir carry acidity as structure. Willett returns to the same questions with the next lot of Santa Barbara County fruit.
