The cellar handed forward in 2020

The fruit comes in from estate vines before Théo Dancer, winemaker at Domaine Vincent Dancer in Chassagne-Montrachet, begins the quieter decisions. He has led the family estate since 2020, after formal training at Lycée Viticole de Beaune and a path that also includes tennis at the French Federation and mountain running. The physical register matters here. Burgundy work asks for repetition, judgment, and restraint, not theatre.

The domaine began in 1996, when Vincent Dancer, an engineer from Alsace, came to Burgundy through family vines that had been rented out to cousins. His name remains on the door, and his method still sets the line: farm first, press slowly, interfere as little as possible. Théo’s post is not a decorative inheritance. At this address, White Burgundy is the central house identity, with Chardonnay carrying the domaine’s clearest voice and Pinot Noir held in smaller proportion. Outside the family estate, Théo also directs Roc Breïa in the Mâconnais and works under his own name, but this cellar in Chassagne-Montrachet is the inherited bench.

Organic parcels, small cuvées

The domaine works about 5 to 6 hectares across Chassagne-Montrachet and other Côte de Beaune sites, including Beaune, Pommard, Meursault and Puligny-Montrachet. It was the first certified organic grower in Chassagne-Montrachet in 2012, a useful fact because it describes vineyard labor rather than an attitude. The farming aims at low yields and concentration, with new plantings cited at 20,000 vines per hectare. The house is small enough that each cuvée remains tied to its parcel and its season.

In the cellar, the method stays spare. Grapes are slowly pressed. Fermentations proceed with native yeasts, without temperature control, enzymes, acids, or sulphur additions at the start. Malolactic fermentation occurs naturally. The lees are not stirred; the wines are not fined or filtered. For the 2022 Chassagne-Montrachet Village, the élevage moved first through used barrels for twelve months, then stainless steel for seven to eight months. The reds are fully destemmed, with no pumping over and only minimal punchdowns. Small amounts of sulphur come before bottling. The point is not absence for its own sake, but a cellar disciplined enough to leave the vineyard legible.

A quiet domaine in the village

The room belongs to a small family-run Burgundy domaine, not to large-scale tourism. Tastings here tend to gather around the cellar, barrel samples, and the estate portfolio, with the conversation returning to vineyard names, texture, and the difference between one limestone register and another. So is the visible machinery of hospitality.

Chassagne-Montrachet gives the work its village frame, but the holdings pull the drinker across several sites. Chardonnay is the main grammar, often described through freshness, minerality, and breadth rather than ornament. Pinot Noir has its place, more discreetly. What matters in the glass is the pressure of decisions made before it reached the table: organic farming, slow pressing, used barrels, stainless steel, and the refusal of bâtonnage. The close attention stays with the 2022 Chassagne-Montrachet Village.
