Grüner Veltliner and Riesling set the daily brief for Emmerich Knoll, winemaker at Weingut Emmerich Knoll in Unterloiben, Dürnstein. He works where estate identity becomes practical: what comes in from the Wachau terraces, how the cellar receives it, and how firmly the finished wine keeps to grape, site, and style. Knoll describes those two varieties as the estate’s main pillars, each accounting for about 45% of production, which gives the house a narrow discipline rather than a broad catalogue. The label carries his name, and the work asks for alignment between person, vineyard, and bottle.

His post is not presented as reinvention. It reads as stewardship, with the winemaker holding the estate’s white-wine language close to the Wachau’s own measures: Smaragd, Federspiel, Steinfeder, vineyard names, and variety. The house works as a small estate of 15-20 hectares, set among steep terraced vineyards along the Danube River, with gneiss, granite, and loess underfoot. That terrain is not background. It is the condition of the work, the part of the method that begins before the cellar door.

A cellar narrowed by white wine

Knoll states the cellar’s concentration without ornament: "We do white wines, yes, 99.5%." That figure explains much of the place. Riesling and Grüner Veltliner carry the central weight, while Chardonnay, Gelber Muskateller, and Gelber Traminer sit within the wider frame of a still-white program. The technical vocabulary reaches the reader through the bottles themselves: Loibner Riesling Ried Schutt Smaragd, Loibner Ried Kreutles Gruner Veltliner Federspiel, Loibner Chardonnay Smaragd, Loibner Gelber Muskateller Smaragd, and Ried Kellerberg Riesling Smaragd.

Those names do a large part of the estate’s speaking. They place the wine before they decorate it, moving from village and vineyard to grape and Wachau category. Federspiel and Smaragd are not used here as flourishes; they mark weight, ripeness, and expectation. Knoll’s own description of the season stays plain: "It looks good depending on the weather." Intent sits on one side of the bench, weather on the other. The cellar has to join them without forcing either one out of shape.

The terraces above the Danube

The room around the work is quiet, classic, and close to its landscape. Unterloiben sits in the Wachau, where terraced vineyards rise from the Danube Valley and the estate’s St. Urban label has become part of the house’s visual grammar. In the cellar and tasting room, the atmosphere follows the same restraint as the wines: elegant rather than theatrical, shaped by repetition, bottle labels, and the long presence of family name on the estate.

Because the vineyards are steep and the soils shift between gneiss, granite, and loess, the place gives the winemaker a firm set of contrasts to read.
