Silvaner and Riesling define the center of his work here. Silvaner is the grape most closely associated with his name, a variety that asks for exact handling and does not reward excess. Riesling gives the cellar a second line of tension, keeping the program taut. The work draws its force from the Escherndorf Lump, the steep vineyard slope above the village, set in a natural amphitheatre of Muschelkalk and Lettenkeuper. The estate farms 15-16 hectares and produces 135,000 bottles annually, a scale that keeps the cellar in direct conversation with the vineyard rather than at a distance from it. Its stated philosophy is sustainable, and the wines remain tied to Franconia’s still-white idiom, especially where Silvaner can hold breadth without losing line. The standout gesture here is the use of concrete eggs for expressive Silvaner from the Lump. Concrete gives movement without the aromatic signature of new wood; the egg shape keeps the lees in quiet suspension and lets texture build through time. In Sauer’s hands, that method suits a grape whose strength is often tactile before it is aromatic. The craft is not built from a long list of interventions.
