His tenure has continued the estate voice through control and consistency rather than gesture for its own sake.

The estate works small, with 21 ha and 120,000 bottles a year, across Spätburgunder, Riesling, Frühburgunder, Weißburgunder, Chardonnay, and Silvaner. In the cellar, Fürst’s method is ecological in intent and Burgundian in touch: whole-cluster fermentation, spontaneous fermentation, extended lees aging, no filtration or fining, and minimal sulfur. Each choice asks for patience. Nothing in that sequence is a shortcut.

The signature wines make the geography legible without needing to explain it twice. Spätburgunder Tradition holds the established house line; Frühburgunder Centgrafenberg and Bürgstadter Centgrafenberg Spätburgunder trocken bring the Bürgstadt slope into focus; VDP GG Klingenberger Schlossberg Spätburgunder carries another named site into the same disciplined register. The wines are still, red and white, with sparkling also part of the estate’s work, but the center of gravity remains the red sandstone and the red varieties that have made this cellar a reference point for German Pinot.

The room is quiet in the way working cellars are quiet, with attention collected around tanks, barrels, and the next decision. Outside, the Churfranken slopes rise on red sandstone; inside, the pace belongs to fermentation, lees, and élevage. The tasting room keeps the same intimacy as the estate, family-run, rustic, and measured rather than staged. This is not a house built around spectacle. It gives the visitor the vineyard first, then the cellar’s answer.

That answer depends on restraint. Whole clusters bring structure, spontaneous ferments bring their own tempo, and the absence of filtration or fining leaves more of the bench work visible in the glass.
