A chef held to the lagoon

At the pass, Sandro Mulfari works as chef at Wildner in Venice, keeping Venetian fish cookery close to the market and the tide. His station is not presented through a long public biography. It is defined by the house in front of him: a family-run restaurant in Castello, on Riva degli Schiavoni, where the kitchen answers to a city with firm ideas about seafood, season, and restraint.

Mulfari’s role is current and direct. He is chef of Wildner, and the work sits inside a restaurant established in 1960 by a Venetian family whose roots run back to the Rialto and Campo delle Beccarie. The earlier generations ran traditional trattorias; the present house keeps that memory in service rather than in display. The kitchen does not need a decorative lineage added to it. Its terms are already narrow enough: baccalà, sardines, bottarga, risotto, small fish for the fryer, and the daily judgement required when the best ingredient changes with the market.

    Rialto discipline on the plate

The method at Wildner is traditional Venetian seafood handled with little interference. Baccalà Mantecato asks for cod worked to a spreadable texture rather than dressed into softness. Sarde in Saor depends on the old sweet-sour logic of fish, onion, vinegar, and time. Paranza brings small mixed fish to the fryer, where timing matters more than ornament. Risotto Bosega and Spaghetti with Bottarga stay within the same grammar: lagoon fish, rice or pasta, salinity, and enough restraint to let the ingredient carry the dish.

The house’s sourcing is tied to the Rialto market and to a supplier network built over decades. That gives the kitchen a practical rhythm. Seafood arrives according to season and availability, then moves through raw, grilled, fried, or sauced preparations without losing its Venetian shape. The wine program follows a similar hand: natural, biodynamic, and Italian bottles selected for a table built around fish, not as a separate performance. Wildner is also aligned with Slow Food principles, including support for small-scale producers and traditional methods, so the menu’s simplicity is not casual. It is a discipline.

    The room facing San Giorgio

The room sits at ground level beneath the pensione, close enough to the lagoon for the view to become part of service without replacing the work. From the veranda, St Mark’s Basin, gondolas, and San Giorgio sit in the sightline; inside, the pace remains conversational and unhurried. The address is visible, even exposed, on one of Venice’s busiest stretches, yet the counterweight is the kitchen’s insistence on local fish, familiar dishes, and service that keeps its family scale.

That tension gives Wildner its character. The room could have become another easy stop along Riva degli Schiavoni. Instead, Mulfari’s pass is attached to market buying, Venetian preparations, and a wine list chosen for small-production bottles. Wildner serves Baccalà Mantecato, Sarde in Saor, and Spaghetti with Bottarga.
