Before this room, Wei worked as head chef at Xi’an in China until 2008, then as a chef at Barshu in London from 2008 to 2015. The move matters because it was not a drift toward a safer London Chinese menu. It was a return to a narrower regional discipline.
Wei has said, “My grandmother is my biggest cooking inspiration.” She has also said, “I learnt how to make noodles from her.” That family apprenticeship sits under the restaurant’s public work: hand-pulled noodles, liangpi cold noodles, paomo, Qishan pork, pot stickers, and roujiamo, the Xi’an burger of meat held in flatbread. Her later London restaurants carry the same northern Chinese pull, but Xi’an Impression remains the small original station, the place where her claim for Shaanxi cooking first gathered its London following.
The menu here works by repetition rather than breadth. Biang biang noodles arrive as thick, chewy sheets in special chili sauce, with beef, pork, tomato and egg, or vegetables taking their place around the dough. Liangpi brings another texture: cold steamed sheets, made from separated wheat starch and gluten, dressed with chili, vinegar, sesame, and heat that lands cleanly rather than softly. Qishan pork noodles pull the bowl toward sourness and spice. Paomo takes torn Xi’an bread into beef or lamb broth with sweet potato noodles, coriander, pickled chili, and garlic at the edge.
The cooking is street food in structure, but the bench work is not casual. The noodle pull must finish with bite, not slackness. Roujiamo depends on the contrast between the flatbread and its filling, whether cumin beef or pork. Pot stickers need the base to take color while the wrapper stays pliant. The wine program stays minimal and the beverage side does not ask for attention, which suits the house. The craft is in wheat, chili oil, cumin, vinegar, broth, and the hand that knows when dough has had enough handling.
The room is bright, white-walled, and tight, with about 12 tables and little space between hunger and service. It sits opposite Arsenal’s Emirates Stadium, but the room does not trade on spectacle. On busy days, the counter and pass carry the pressure of queues, takeaway bags, families, solo diners, and football crowds moving through Benwell Road. Plates land quickly. The service is matter-of-fact. The eating is communal because the room leaves no other option.
That closeness gives the food its scale. A bowl of biang biang can take the table by itself; liangpi cools the mouth and then brings the chili back; paomo asks for torn bread, broth, and time inside a room built for turnover. Xi’an Impression has gathered recognition, including an OFM Awards Best newcomer award for Wei in 2019, and dough is pulled, dressed, and carried across the small Holloway room as biang biang noodles.
