Inside, the vocabulary is not neutral: Zunftsaal, Waagstübli, Nussbaumholz, guild wood, civic memory. The pass works against that weight by refusing theatre. Plates move out cleanly.     Zunfthaus zur Waag matters because the craft and the address remain unusually legible together. The guild was founded in 1336 for weavers, hatters and bleachers, and the public restaurant now carries that inheritance through food rather than costume. Kaiser’s task is not to modernise the house into anonymity, nor to turn history into a prop. It is to keep Serious Swiss cooking precise enough for the room.
