i. Biography
Alain Borel is a fourth-generation chef from Avignon, France, and chef-owner of L'Auberge Provençale in White Post, Virginia, which he opened with his wife, Celeste Borel, in July 1981. He grew up in the Provençal kitchen of his grandfather's Hôtel du Louvre in Avignon and later cooked at the James Beard House as part of the Great Country Inn Chefs Series. In 1992 he was featured on Great Chefs of the East.
