Alejandro Chamorro is an Ecuadorian chef and co-founder of Nuema in Quito, where he has led a cuisine centered on Ecuadorian ingredients, biodiversity, and culinary identity. Sources describe him as Nuema’s head chef, and they note that he opened the restaurant in 2014 with pastry chef Pía Salazar. He has been recognized for work that helped make Nuema the first Ecuadorian restaurant to enter Latin America’s 50 Best Restaurants list.
