Alexander Gaßlbauer is the Küchenchef at Gasthaus Waltz in Munich. Coverage of the restaurant says he is from Niederbayern/Bad Birnbach and that he previously trained under Anton Schmaus, then worked with the Döllerer family in Golling before moving to Nenad Mlinarevic’s Bauernschänke in Zurich in 2020. Since the Waltz project began in 2022, he has been associated with the venue’s alpine-leaning Austrian-style cooking.
