i. Biography
Álvaro Romero is a Chilean chef and the founder of La Mesa in Vitacura, Santiago, where he has led the kitchen since 2019. His background combines design and gastronomy studies in Chile with professional experience in France, and he previously worked at Restaurant Europeo at The Singular Lastarria after earlier kitchen experience in Chile. He is the chef and owner of La Mesa and note recognition from Chilean gastronomic press and other industry honors.
