Where They Are Now

Estate work and collective responsibility meet in the same daily routine: one side tied to the demands of the domaine, the other to the stewardship of growers in the same place. With Amaury Devillard, that balance reads as practical winegrowing—work in the vines, scrutiny in the cellar, and a steady sense that each decision alters the final wine. For reds at the domaine, the cellar sequence is defined: pre-fermentary maceration, then fermentation, then another maceration to bring out colour, flavour, and tannin. The method is orderly, but not mechanical. It uses time to shape structure, and structure to carry the wine beyond the harvest. Across Domaines Devillard, the timing target is just as exact: grapes should reach tanks in under 30 minutes from picking. With Amaury Devillard, that detail points to proximity, coordination, and a refusal to let freshness drain away between vine and vat. Les Cinq, created in 2021, is the clearest expression of that logic: a unique Mercurey Rouge Premier Cru cuvée assembled from the best barrels from five Premier Crus at Château de Chamirey. The selection happens at barrel level, so the wine is built from choice rather than scale.
