The Climb
Angelo Wong’s career maps the discipline of high-end hotel kitchens in Hong Kong and Macau: repetition, service tempo, and standards that leave little room for drift. He trained at Chinese Culinary Institute (2014), but the working foundation was laid earlier, beginning as cook at Hong Kong Maxim's Group (2000–2004). From there, the line continued through cook roles at Marco Polo Hotels - Hong Kong (2004–2007), L'hotel Nina et Convention Centre (2007–2010), and Four Seasons Hotel Hong Kong (2010–2012). The progression is defined less by leaps than by accumulation. By the time Wong became Head Chef at Kai Shing Management Services Limited (2012–2015), he had already been shaped by large-scale operations where consistency has to hold under pressure. He then moved into Sous Chef and Head Chef at Lai Sun Group (2015–2017), before taking on Head Chef at City of Dreams Macau (2018–2024), a stretch that marks both range and control. Angelo Wong is now Executive Chef of City of Dreams Macau (since 2024), continuing in a role that reflects a career built from the kitchen floor upward. The arc runs from execution to direction: from carrying service in the line to setting the standards that shape a whole operation.
Today
Executive Chef demands command over pace, systems, and consistency, and Wong’s record across Hong Kong and Macau shows that kind of kitchen discipline. His background across major hotels and hospitality groups suggests a chef formed by exacting environments, where the daily task is to keep service tight and standards intact. There is also continuity in his current position at City of Dreams Macau. Having served there previously as Head Chef from 2018–2024, Wong brings institutional memory to the role as well as experience. That matters in a property where culinary identity has to stay precise without losing its edge.
Signature
Angelo's signature dishes include Crispy Almond Crab Slaw. The dish name points to contrast and texture, with crispness set against delicacy. It fits a chef whose work has been shaped by exacting kitchens, where a signature plate has to read clearly and hold its structure.
