i. Biography
Born in Taiwan, trained at the French Culinary Institute in New York, and later shaped by kitchens in New York, Montreal, the United Kingdom, and Vancouver, the cooking associated with Angus An is built from crossing systems rather than staying inside one school. Classical structure, professional speed, whole-ingredient discipline, and Southeast Asian seasoning logic all sit inside the work. Since 2009, Maenam in Vancouver has been the main site for that synthesis: Thai cuisine informed by fresh West Coast ingredients, handled with intensity, restraint, and a clear read on place.
The Route
Formal training at French Culinary Institute gave Angus An a classical base before the externship at JoJo in New York put that training into service under professional pressure. The next layer came at Toqué, where chef working under Normand Laprise meant working inside a kitchen culture associated with precision, discipline, and fuller use of ingredients. That stage matters to the craft because it set a foundation for building flavour with patience, treating process as non-negotiable, and seeing an ingredient beyond its prime cuts or obvious uses. The cuisine Angus An studied in United Kingdom (from 2004) while working as a chef under David Thompson added another technical framework rather than replacing the French one. Heat, sourness, salt, sweetness, bitterness, fragrance, and texture became part of the same working vocabulary as structure and timing. That precision later carried into Gastropod, where Angus An became founder / chef, and into the broader way his kitchens read balance as a craft problem, not a decorative effect. Restaurant-building became part of the practice itself: Maenam (since 2009), Longtail Kitchen (since 2013), Fat Mao, Sen Pad Thai, and Sainam (since 2025) each give Angus An a different format for carrying flavour, texture, and service rhythm. The pattern is not one fixed expression repeated unchanged; it is a set of rooms testing how this technique, local product, and direct seasoning can hold across different scales and settings.
Current Practice
Maenam remains the primary marker of the work, with Angus An cooking from fresh West Coast ingredients through the lens of that training. The restaurant’s language is built on intense fresh flavours, seasonal ingredients, and locally sourced products. Herbs, broths, pastes, heat, acidity, and texture are treated as structural components. The cooking is direct, but the effect depends on placement and control. Ingredient-driven cooking at Maenam gives the food its shape: planned, clear, and built for flavour that lands firmly without excess. Intensity comes through calibration. Each element has a task, and seasoning carries the dish rather than covering it. Across the region, the same authorship extends through Longtail Kitchen in New Westminster, Fat Mao, and Sen Pad Thai. The formats differ, but the working vocabulary stays legible: freshness, heat, texture, and comfort handled with discipline.
