    Foraged things at the pass

    Nettles, spruce tips, chanterelles and other forest finds give Gus Stieffenhofer-Brandson, Chef at Published on Main in Mount Pleasant, Vancouver, his first decisions at the pass. The plate begins with what the region will give, then moves through a kitchen shaped by formal training, repetition and restraint. Red River College and Hotel Atrium supplied the early frame; Old Spaghetti Factory in Winnipeg supplied the first station, from dishwasher to assistant kitchen manager. At Hawksworth, where he worked as sous chef until 2018, the discipline tightened under pressure and volume.

    Published on Main opened in December 2019 with that practical kitchen memory still visible. Stieffenhofer-Brandson’s cooking is modern Canadian without treating Canada as a fixed pantry. Manitoba roots meet a Vancouver sense of season; global references appear, but they do not take the plate away from British Columbia. His own brief remains plain: “I wanted Published to be somewhere I would want to eat. And eat often.” That sentence explains more than a manifesto would. The room can carry a tasting menu, small plates or an à la carte pass, but the work is built around desire sharpened by technique.

    A menu led by season and restraint

    The kitchen’s method is foraging-forward, produce-led and alert to texture. Regional ingredients set the first line, local and sustainable sourcing keeps the frame close, and delicate technique keeps the finishes clean. The dishes named by the house move between wit and control: Foie Gras NRG bar, Too Many Plums, Birch, Please!, Boozy Freezie. The names loosen the room; the cooking still has to hold.

    On the menu, chicken-fried maitake carries the comfort of a familiar crust into the register of mushrooms and ranch; side-striped prawns and roasted halibut keep the coast present without forcing a postcard version of it. Other plates have placed stinging nettle in ravioli with vodka sauce, dungeness crab with unripe green almonds, and rare local mushrooms that have required five hours of foraging for a serving. Published on Main earned a MICHELIN Guide One Star in 2022, among Vancouver’s first guide selections, and has retained that star as of 2025. Awards sit around the work, not inside it. The plate still has to be cut, cooked, sauced and sent.

    The room while service moves

    The dining room reads relaxed before it reads formal: good light, hanging plants, a warm register, the sound of a small room filling into lively service. The pass has to answer that atmosphere without slowing it down.

    That balance matters to the cooking. Stieffenhofer-Brandson has said, “We asked ourselves where we wanted to go and eat in the city, and agreed that the question was getting harder and harder to answer.” Published on Main answers by keeping the counter close to the landscape and the room close to appetite.
