Training and Lineage
Business training can shape a kitchen as much as station work when the work spans houses, markets, and formats. Anne-Sophie Pic studied at business school before taking international internships with Cartier and Moët & Chandon in Japan and the United States, experience that placed brand discipline, service context, and cross-border expectations alongside the craft itself. French gastronomy here is handled through inheritance and expansion rather than nostalgia. Since 1997, Anne-Sophie Pic has been chef-owner of Maison Pic, maintaining a family house while building related restaurants with distinct addresses and audiences. In 2012, the opening of Restaurant Anne-Sophie Pic and La Dame de Pic extended that work beyond Valence, keeping the Pic name attached to contemporary French cooking without detaching it from its lineage. The La Dame de Pic format has also been tested across different cities and dining cultures. Anne-Sophie Pic served as chef-owner at La Dame de Pic in Singapore from 2019 to 2024, and the later openings of La Dame de Pic - Le 1920 in 2020, Chef Anne Sophie Pic at Le Normandie in 2025, and Cristal Room by Anne-Sophie Pic in 2025 show a practice built through replication, adaptation, and control of identity across venues. “I think that’s the way it has to be to come out stronger in the end.” Anne-Sophie has said.
The Current Work
Aromatics are the organizing principle of the current work. Anne-Sophie Pic describes her approach as “Suffusion,” a way of building dishes through the interaction of aromas and flavors rather than force or excess. At Restaurant Anne-Sophie Pic in Lausanne, Switzerland, and La Dame de Pic in London, that method sits within French cuisine while being applied across international dining rooms.

Distinctions
Recognition has followed both craft output and cultural standing. Anne-Sophie Pic received the Eckart Witzigmann Award in 2009, was named Veuve Clicquot World’s Best Female Chef in 2011, and in the same year was made Chevalier (Knight) of the French Legion of Honour. Taken together, those honors place the work in professional, international, and French civic registers without changing the underlying measure: consistency across houses, signatures, and service formats.
