At the University of Chicago, Ariel Schlein built the academic base that later informed a career shaped by operatorship rather than a single lane. From 2010–2017, as co-founder and Managing Member at Dutch's Spirits, he worked in the practical space where a concept has to become a functioning business. In 2018–2018, he added a brief but specific stint as Managing Director at Giftlabel, extending that operating range into another kind of company structure. Since 2017, Tied House has been the founding platform, and since 2018, FLY Spirits has been the executive post. Together, those roles show a mode of work built around brand stewardship and commercial discipline: understand what the product is meant to do, keep the structure tight, and move it forward with intent.

Where They Are Now

The current frame is an executive one: the University of Chicago-trained operator who helped bring a family farm distillery idea into being now leads a New York spirits company. That arc matters less as biography than as proof of execution, moving from early concept work into company-level responsibility. The sequence is clear enough to read as method. Education, the 2008 conversation with Adams, the co-founding of Dutch's Spirits, and FLY Spirits from 2018 onward each mark a step in the same line of work. Ariel Schlein's path is not one of reinvention so much as accumulation, with each stage adding another layer of operational and brand-side judgment.

Sugar Wash Moonshine, Boomtown Bitters, and ProhiBitters sit at the center of Ariel Schlein's signature work. Read together, they point to a practice that spans spirit and bittering formats, with the bottle serving as the common language across the line.
