The Climb
Training at Aerospace Institute gave Artem Grebenshchikov a technical base before professional cooking took over. The first service floor was a line cook post at restaurant in Vyborg, where kitchen pace and pressure became part of the job. From there, the work moved through three more rooms with different demands: chef at Tapiola recreation center in forest zone, cook at canteen in St. Petersburg, and chef at Erarta Café in St. Petersburg. Each role added another layer of operating rhythm and service discipline before the path reached Bourgeois Bohemians (BoBo).
Today
At Bourgeois Bohemians, the menu is built as a progression of increasing intensity, and Artem Grebenshchikov works inside that structure. The aim is sequence rather than accumulation: courses are arranged to move the diner forward through gradation, texture, and flavor pressure. That kind of pacing gives the meal its direction, with each step carrying the next instead of standing apart from it. The house style stays within signature cuisine, and the work under Artem Grebenshchikov is described through subtle technique, refined flavor, and aesthetic precision. Seasonality, natural aesthetics, and unexpected combinations are used as a set of controls rather than decoration. The result is a numbered sequence of ideas, each one contributing to the larger arc of the menu.
Signature
Artem Grebenshchikov's signature dishes include Up High and BOBO’s Signature XIV. Together they show the restaurant’s method of composition: exacting, restrained, and built to let flavor unfold in layers.
In Their Words “I immediately liked the confectionery art: the accuracy of the programming, the temperature. Any deviations are critical.”
