i. Biography
Born in Jerusalem, Aviram Turgeman came to the United States in 2001 with restaurant and hospitality already in view, and with a home culture where cooking and wine sat in the same register. In a family, as he puts it, where “everyone cooks, so wine went hand in hand,” the habits of the table were already linked. Study, repetition, and long hours on the floor turned that inheritance into working knowledge, until wine became less a subject of interest than a tool for service.
The Climb
Formal study at Wine & Spirit Education Trust (WSET) gave Turgeman a structure for the instincts he brought with him. He then moved into the bar trade as a bartender at Café d’Alsace in New York (from 2001), building a career one service at a time. Behind the bar, on the floor, and later in beverage program roles, he learned how a room functions and how a bottle changes its pace. Today, Aviram is Beverage Director of Chef Driven / Tour de France restaurant group and Wine Director of Nice Matin.
Today
At Nice Matin in New York, Turgeman is Beverage Director and Partner, and he also serves as Wine Director. The work keeps him in the dining room through lunch and dinner service while he oversees wine buying and training across the group. It is a role that combines hosting, editing, and instruction: selecting bottles, shaping how they are described, and guiding how they arrive at the table. Beyond Nice Matin, he also holds Beverage Director responsibilities across Chef Driven’s ventures, extending the same discipline beyond a single room. “After coming here, I started part-time as a bartender at Café d’Alsace and it went from there,” he has said, a plain account of a career built service by service.

His formal credentials include study at the American Sommelier Association in 2003.
