Coming Up
Training at The Ohio State University in 2009 set the baseline, but the real shaping happened on the floor and the line. At Eight on High Street, Avishar Barua moved from server to line cook and bartender, a progression that put front-of-house timing and back-of-house pressure in the same frame. That mix later carried into Service Bar in Columbus, Ohio, where he worked as executive chef and general manager and held both the menu and the room in view at once. Joya's Café, since 2022, and Agni, since 2023, mark the move from operating kitchens to owning them. The route from student to server to bartender to line cook to chef-owner reads less like a leap than a long apprenticeship in how a dining room and a kitchen have to move together.
Where They Are Now
Agni in Columbus, Ohio is where that combined training is most visible. As chef there, Avishar Barua works with hospitality as part of the cooking, not something separate from it. The guiding idea is plain: "I want the restaurant to feel like somebody’s home." That puts the emphasis on ease, pace, and a kind of welcome that is built into service rather than added after the fact.
Signature
Cheesy brisket crunch, cheesy double crunch tacos, Happiest Meal, BBQ McBao, and chaat-poti point to a menu language that stays close to comfort while leaving room for surprise. The dish names show a cook who uses texture, layering, and a direct sense of fun without losing control of the plate. In Avishar Barua's work, the signature is not restraint alone or novelty alone, but the ability to make familiar forms feel specific.
In Their Words “I want the restaurant to feel like somebody’s home.”
Honors
James Beard Award semifinalist, USA TODAY Restaurants of the Year, and Bon Appétit 20 Best New Restaurants are the recognitions attached to Avishar Barua's work. They track the reach of a kitchen practice that has moved from local operation to wider notice without changing its center: service, personality, and food that lands with an audience beyond the room.
