At Cal Poly, San Luis Obispo, he said the path was not mapped in advance: “I didn’t know what I wanted to do, so I wound up majoring in business and entrepreneurship.” That mix of uncertainty and structure reads less like a detour than an early apprenticeship in how to think, work, and move through a trade. Fine dining ran alongside school and added another layer to that education. “I was working in fine dining while I was going to school.” In practice, that meant the pace of service, the discipline of timing, and the habits of observation that come from the dining room. For Ely, those hours sat next to his studies and helped build the working context that later informed his wine career. Place sits close to the center of the work. “Correct. I grew up on the Central Coast.” That upbringing gave him an inside view of the region that later became part of his professional frame, linking farming country, hospitality, and cellar labor into a single practical vocabulary.

Where They Are Now

Winemaking at Barton Family Wines in Paso Robles is the current assignment for Ely, and the emphasis he gives the work is clear: freshness. Lift, energy, and balance are the terms that define that specialty, placing him in a lane where precision matters as much as power. The style is presented without flourish, but with intent. That approach fits the rest of the route that led to Paso Robles: Central Coast education, restaurant service, harvest exposure, and cellar discipline. Each of those parts shows up in the way Ely describes the work, with the tasting room and the vine row linked by the same basic expectation—attention to detail, and wines that stay alive in the glass.
