Since 2021, Tomo has brought those earlier kitchen habits into a more personal form, with Brady Williams owning the restaurant and shaping the program around them.

Where They Are Now

Since 2021, Tomo in White Center, Washington, United States, has been run with a close read on seasonality rather than a broad calendar approach. The restaurant works with microseasonal tasting menus and five-course set menus that change as ingredients shift, keeping the cooking in direct conversation with the moment it is served. The result is compact and exact: each plate is built to catch a brief window before it closes. A dish topped with sorrel juice, grapes, and a savory custard of Dinah's Cheese from Kurtwood Farms shows that approach in miniature. Fruit, dairy, and ice are used to form something fleeting and precise, with the structure of the plate holding only long enough to register fully before it gives way. That same restraint carries across the menu, where clarity does the main work and nothing is left to compete for attention. Beans and Tendons follows the same logic. The dish is grounded in texture and depth of savor, and its name points straight to that register without dressing it up. In the dining room, a mostly natural wine program runs beside the food, adding its own line of acidity, lift, and earth. The pairing keeps the experience precise, but not severe.
