The Climb

The line work came first: busboy, food runner, cook. Brandon Jew moved through those stations before taking a cook apprenticeship in Piedmont and Bologna, Italy, then tightened the work at Quince in San Francisco and Zuni Café in San Francisco. In 2010, he became chef at Bar Agricole in San Francisco, and the progression reads as a study in repetition, pace, and control. Since 2016, Mister Jiu's has been the base of that work, where Brandon Jew serves as chef patron and chef and owner. The role keeps the focus on the same question every trade kitchen answers in its own way: how to carry a tradition forward without flattening it.

Today

At Mister Jiu's, the dishes are where the brief becomes visible. Cheong Fun, sizzling rice soup with a rock shrimp upgrade, and Dungeness crab peanut noodles are the clearest markers of the current menu, with each plate placing technique, product, and lineage in the same frame. That is also where Brandon Jew's stated responsibility sits: in the tension between inherited form and present-tense execution. The food makes that conversation concrete rather than rhetorical.

Signature

Brandon Jew's signature dishes are built around recognizable forms with clear personal markers: Cheong Fun, spicy ginger molasses cake, sizzling rice soup with a rock shrimp upgrade, and Dungeness crab peanut noodles. The range says as much about technique as it does about menu identity, moving between savory staples and dessert without changing register.

Recognition

The public record attached to Brandon Jew includes two James Beard honors in 2022: Best Chef: California and the Restaurant and Professional category for the cookbook Mister Jiu's in Chinatown. Together, they place the restaurant work and the book work in the same field of recognition.
