i. Biography
Brian Huston is an Evanston, Illinois–native chef best known for opening Boltwood in downtown Evanston in 2014 and for his earlier work as chef de cuisine at The Publican in Chicago. Sources also place him at Blackbird from 1998 to 2000 under Paul Kahan and later as chef at The Kitchen in Boulder before he returned to Chicago to help define the Publican’s farm-to-table style. He was nominated for James Beard Award Best Chef: Great Lakes for Boltwood and is now associated with The Exchange in Chicago.
