i. Biography
Brud Holland is the Head Chef at Fox Run Vineyards in Penn Yan, New York, and Executive Chef at Sapalta at Plum Point Lodge in Himrod. A graduate of the New England Culinary Institute, he has spent over three decades championing farm-to-table cuisine and regional wine pairings throughout the Finger Lakes. In addition to his winery and restaurant leadership, he founded the artisanal venture Finger Lakes Made and serves as a culinary instructor at 171 Cedar Arts Center.
