i. Biography
The Path
Calvin Eng trained at Johnson and Wales University, where formal study gave shape to a cooking practice that would soon lean on his own point of view. That early foundation shows up in the way his work moves from discipline to intent: less about copying a style, more about building one. In 2019, he became Head Chef at Win Son in East Williamsburg, Brooklyn, New York City, a post that put his skills under pressure and brought his approach into sharper view. The role marked a clear step up, with experience and creative direction starting to align. Since 2021, Calvin Eng has been chef-owner of Bonnie's. The title reflects a career that has moved from training to authorship, with the restaurant serving as the place where his ideas take form. Bonnie's also carries the personal marker in its name, drawn from his mommy, while the work itself points to a contemporary reading of Cantonese food. His path reads as accumulation: training, kitchen experience, then ownership, each stage adding more definition to the last.
The Work Today
“i hope to be a part of this new wave of Chinese American cooks pursuing and contributing to the evolution of cantonese food with bonnie’s, which is named after my mommy.” That stated aim sits at the center of Calvin Eng's work at Bonnie's. The restaurant gives his ideas a concrete setting: family reference in the name, and a broader frame that places him among Chinese American cooks pushing Cantonese food forward. The project is built around that dual focus, keeping lineage close while treating the cuisine as something active, current, and still developing.
Signature
Calvin's signature dishes include yeung yu sang choi bao and dao gok. They are part of the restaurant's vocabulary and part of how his point of view becomes visible on the plate. The dishes give shape to his approach to Cantonese cooking at Bonnie's, where specificity matters as much as expression.
Acclaim
Calvin Eng has received James Beard Foundation, Emerging Chef nominee (2022). Calvin's honors include Food & Wine Best New Chef (2022). The award places his work in clear industry view and marks the attention his cooking has earned. It also reflects the steadiness of a chef whose background, training, and current practice all feed the same aim: to show what Cantonese food can be.
