In Their Words “Growing up on a wheat farm” is the kind of background that leaves a practical mark on how grain is understood. Cameron Syme’s emphasis is on provenance and fairness: he’d like “to deal directly with the farmer and make sure we deliver that value to them, rather than to an industrial company in Perth who is doing this malting process.” The position is clear. Grain is not just input; it is part of the value chain that should remain visible to the grower. Barrel selection is treated with the same directness. “We are looking for barrels which have produced quality wine and what better place to get that than our new neighbours in the Valley.” In that line, the logic is simple: quality sits close at hand, and the useful casks are found by paying attention to the work already being done nearby.
