i. Biography
Carles Pérez de Rozas is the chef and owner of Berbena and Pompa in Barcelona's Vila de Gràcia district. After culinary training at the Hofmann School and stages in international kitchens including Michel Bras, Nihonryori RyuGin, Sant Pau, and Central, he opened Berbena in 2018, earning a Michelin Bib Gourmand. In 2025, he expanded his culinary presence with the opening of Pompa, a wine-focused neo-bistrot on Carrer de Sèneca.
