Carlos Delgado

Carlos Delgado is a Peruvian chef from Callao, Lima, known for leading the kitchens at Washington, D.C.’s Causa and Amazonia, where his work helped earn a Michelin star for Causa and recognition from the Michelin Guide. He previously worked at José Andrés’s China Chilcano, where he rose to Head Chef and built expertise in the restaurant’s Peruvian-Chinese-Japanese fusion style. In 2026, he launched Maru San in Capitol Hill, his first solo venture and a Nikkei handroll concept.
