    Carlos Delgado is a Peruvian chef from Callao, Lima, best known for leading the kitchens at Causa and Amazonia in Washington, DC, where Causa earned Michelin recognition and a Michelin star in 2023, 2024, and 2025. He is also the chef behind Maru San, a Nikkei handroll bar in DC’s Eastern Market neighborhood and his first solo venture.
