Catalina Vélez is a Colombian chef, researcher, and founder of Domingo in Cali, where she leads a restaurant centered on Colombian biodiversity, territorial ingredients, and regenerative cooking. She has more than 18 years of experience researching ingredients, culinary traditions, and food systems, and she was recognized with a Best Chef Awards knife and a La Liste Community Spirit Award in 2024.
