i. Biography
Celia Florián is an Oaxacan chef and the co-founder of Las Quince Letras, which she opened in Oaxaca’s historic center in 1992 with Fidel Méndez. The restaurant is known for regional Oaxacan cooking and its signature mole negro. She left banking in 1992 to dedicate herself fully to the restaurant and was recognized by Culinaria Mexicana as chef of the year.
