Céline Couillon

Céline Couillon is the maître de maison and service lead at La Marine in L’Herbaudière, Noirmoutier-en-l’Île, where she runs the dining room with her husband, chef Alexandre Couillon. She joined the Noirmoutier hotel school in 1993, met Alexandre there, completed a CAP/BEP in cuisine and later a BTS in salle/service, then helped take over the family restaurant in 1999. La Marine has since become a Michelin-starred destination and part of Relais & Châteaux, with Céline repeatedly described as the discreet hostess orchestrating service.
