The Climb
Training at UniFil - Centro Universitário Filadélfia gave Cesar Scolari the structural base that later showed up in his work: discipline, repetition, and a clear respect for process. From there, the kitchen became a place of accumulation, with each post adding another layer to a career shaped less by display than by steady practice, stamina, and the habits that hold service together. At Veríssimo Bar-SP, Cesar Scolari worked as chef/cozinheiro in the pace of a busy service, where consistency matters as much as flavor.
At Mina, he moved into the Head Chef role, taking on the practical demands of leadership: organizing a brigade, carrying standards, and keeping a menu coherent under pressure. Those posts trace a shift from execution to direction, with technique remaining the throughline. Teaching and service now run side by side in Cesar Scolari’s work. As Professor de Gastronomia at Menu Escola de Gastronomia, the classroom becomes another site of transfer, where experience is turned into method.
As chef of Botanique Hotel Experience (since 2026), he remains in active service, working in a setting where hospitality, timing, and precision all have to line up.

Today
“This year I have 20 years in the kitchen, many stories and dishes, and I am always cooking as if it were the first day.” The line reads like a cook measuring time by service, not sentiment. In Cesar Scolari’s case, the value of experience is not distance from the work, but the ability to keep returning to it with the same attention. The phrase points to a style that favors welcome over spectacle. In public or private, Cesar Scolari frames food as something shared directly, with the home and the table treated as extensions of the same craft.
Signature
Pizzaburguer is Cesar Scolari’s named signature, a dish title that favors clarity and recall. In a career marked by discipline and progression, it shows a side of the work that is direct in language and built to stick in memory.
In Their Words “This year I have 20 years in the kitchen, many stories and dishes, and I am always cooking as if it were the first day.”
Recognition
Finalista do Top Chef Brasil sits on Cesar Scolari’s record as a public marker of review and recognition. For a cook with a background spanning service, leadership, and teaching, it places the work in view without changing the terms of it: training, repetition, and standards held across roles.
