i. Biography
Chef/owner Cesar Zapata has built Phuc Yea in Miami around Modern Vietnamese cooking filtered through Colombian and Cajun roots. The work is cross-referenced rather than fused into a single school: Vietnamese technique, Colombian memory, and Cajun seasoning logic all stay legible, with Miami shaping the final register.
The Climb
In South Florida philanthropy, the co-chair role Cesar Zapata held at Taste of the Nation (2017–2020) placed him in the civic side of the trade, where restaurant work and fundraising often overlap. Since 2020, his seat on the Leadership Council of No Kid Hungry has extended that public-facing responsibility. Those roles sit alongside his restaurant work, showing a chef whose influence has moved between service, advocacy, and ownership.
Today
At Phuc Yea, Cesar Zapata’s position as chef/owner keeps the cooking centered in Miami. The restaurant’s Modern Vietnamese menu does not read as a fixed inheritance; it reads as a working vocabulary built from Vietnamese, Colombian, and Cajun influence. The result is layered, direct, and built to hold contrast without losing structure. The menu is organized around bold, shareable plates, with a Miami lens that favors pace at the table and conversation across it. That format gives the food room to function communally, while still keeping the plate itself specific. The signature Smoked Short Rib Experience is a 72-hour slow-prepped whole beef bone glazed to tender perfection, served with bao buns, lettuce wraps, vibrant salads, and all the trimmings. As a large-format dish, it is built for assembly and sharing. The format makes the technique visible: slow prep, glazed finish, and a service style that asks diners to work the plate together. It also shows how Zapata’s cooking keeps generosity, multiple roots, and table-side interaction in the same frame.

Recognition
Recognition around Cesar Zapata comes through two channels: the restaurant and the advocacy. His work at Phuc Yea anchors him in Miami’s dining field, while No Kid Hungry and Taste of the Nation place him in the broader conversation around food access. That combination frames his career as one built in public, with the cooking and the community work reinforcing each other.
