Owner of Delage in Oakland is one working title within Chikara Ono’s regional practice, not the whole measure of it. The through-line is disciplined cooking applied across small rooms, market settings, and focused formats: kaiseki grounding, local California ingredients, close attention to fish and rice, and restaurant ideas built to make precision usable rather than remote.
The Climb
A cooking practice built from repetition started for Chikara Ono in 1986, as a cook at an unnamed restaurant in South Bay, California. The early work was practical: station habits, service rhythm, and the kind of attention that compounds only by doing the work. Traditional kaiseki then supplied a stricter frame when Ono worked as a staff member in traditional kaiseki restaurants at traditional Japanese kaiseki restaurants in Japan, where seasonality, sequence, restraint, and controlled presentation define the meal. That grounding carried back into California through chef work at Kisaku in San Mateo, California, and later through co-founding and co-owning Geta in Oakland, California. Across those rooms, Ono’s cooking developed around precision and economy rather than volume: fish, rice, timing, temperature, and a point of view that depends on consistency more than display. Oakland restaurant work became more explicit in 2012–2014, when Ono was founder/operator at B-Dama in Piedmont Avenue, Oakland, California. The next chapter, chef-owner at AS B-Dama in Swan’s Marketplace, Old Oakland, California from 2014, placed that cooking inside a market neighborhood with its own cadence. From 2018, founder/operator work at Utzutzu in Alameda, California extended the same pattern across the water: specialized formats shaped for nearby communities. The current group of roles shows range without abandoning the core method: owner of Delage since 2016, partner of Masabaga since 2020, and founder/operator of Dela Curo since 2021. Each address works with a different scale and dining occasion, but the shared task is clear: introduce flavors and formats with specificity, restraint, and enough accessibility for East Bay diners to return to them.
Today
Delage, founded and operated by Ono in Oakland since 2016, compresses several strands of the practice into an intimate format: Michelin-quality sushi with small plates influenced by French techniques, intended as a casual version of upscale omakase. The restaurant serves a multi-course prix fixe menu focused on California-inspired Japanese cuisine with a bit of French flair. Its structure keeps the cadence of omakase while using an Oakland register of ease rather than ceremony.
