Since 2016, the Cellar Master’s desk at Martell has been Christophe Valtaud’s point of view on the house: one that starts in the vineyard, moves through distillation, and ends in blending. The work is built on terroir and on timing, with patience and precision doing as much as any set of tools. In cellar practice, memory matters too, because each decision has to hold the style of the house while keeping faith with the wine underneath it.
Where They Are Now
At Martell, Cellar Master work runs on sequence and control. Valtaud describes it plainly: “Distillation is where we concentrate all the qualities of the wine, and from there, blending and aging take place.” The line captures the discipline of the craft: concentration first, then judgment in blending, then aging managed with restraint rather than force. The region sits at the center of that discipline. “Cognac can only be crafted in Cognac, thanks to the winegrowers and artisans of the cognac industry.” For Valtaud, that is not a slogan but a working fact: the cellar depends on the vineyard, and the identity of the spirit depends on the people and place that make it possible. His role sits between those two ends of the process, carrying vineyard character into the cellar and into the house style of Martell.
