The Climb
Early on, the craft was shaped under Ignacio Muguruza and Martín Berasategui, where Daniel Carnero worked as cook and absorbed the discipline, pace, and standards that form a kitchen’s operating code. A long stretch as cook at La Cosmopolita in Málaga (2010–2025) followed, giving the work time to settle, tighten, and develop without haste. From there, the role widened. Daniel Carnero is chef of Kaleja (since 2019) and chef of La Cosmo (since 2022), moving between two kitchens with a method built step by step.
