Daniele Accordini began this phase of his career in 2016 as director and winemaker at Cantina Valpolicella Negrar. The role asked for both technical command and the steadier business of holding a house style together, a balance that has remained central to his work since then. In 2021, that remit widened again when he also became wine educator and narrator in a tasting video at Domìni Veneti, carrying the same precision from cellar to explanation. Today, Daniele Accordini is enologist and general manager of Cantina Valpolicella Negrar and winemaker of Domìni Veneti. The pairing shows a career built across production, oversight, and communication, with the practical and the interpretive sitting side by side.

Where They Are Now

He now holds two posts. At Cantina Valpolicella Negrar, he is enologist and general manager; at Domìni Veneti, he is winemaker. The arrangement reflects two sides of the same craft: one concerned with the mechanics and management of production, the other with shaping wines that carry the estate’s character outward.

Signature

Daniele Accordini's signature dishes include Valpolicella Classico DOC 2024, Valpolicella DOC Classico Superiore 2019, Amarone, and Ripasso. Taken together, these names point to a range that moves from Valpolicella Classico DOC 2024’s lighter register to the denser expression associated with Amarone and Ripasso.

In Their Words “We designed it starting from the countryside, choosing grapes from 20-25-year-old vineyards, located between 200 and 250 metres above sea level, trained using the double pergola method, grassed and irrigated using drip irrigation.” The sequence is built from vineyard decisions rather than cellar rhetoric: vineyard age, altitude, training system, ground cover, and irrigation all appear as parts of the same working logic. In Daniele Accordini’s terms, the wine begins with how the vineyard is placed and managed. “Compared to our usual Valpolicella Classico from the Domini Veneti line, this wine is lighter in every way: colour, alcohol (only 11.5 degrees), structure.” The comparison is plain and technical. Colour, alcohol, and structure are all reduced, and that reduction becomes the point: a wine defined by less weight and a more open profile than the house’s usual Valpolicella Classico.
