In Their Words “We designed it starting from the countryside, choosing grapes from 20-25-year-old vineyards, located between 200 and 250 metres above sea level, trained using the double pergola method, grassed and irrigated using drip irrigation.” The sequence is built from vineyard decisions rather than cellar rhetoric: vineyard age, altitude, training system, ground cover, and irrigation all appear as parts of the same working logic. In Daniele Accordini’s terms, the wine begins with how the vineyard is placed and managed. “Compared to our usual Valpolicella Classico from the Domini Veneti line, this wine is lighter in every way: colour, alcohol (only 11.5 degrees), structure.” The comparison is plain and technical. Colour, alcohol, and structure are all reduced, and that reduction becomes the point: a wine defined by less weight and a more open profile than the house’s usual Valpolicella Classico.
